It's been a long time since my last post. This post is to pay homage to my mother who was diagnosed with Alzheimer's Disease. My family and I have been so distraught by her diagnosis. Realistically speaking, while trying to help my mother as primary caregiver and caring for my youngest son who I have mentioned in the past has health challenges of his own, the last thing on my mind was updatingPaula Louisehttp://www.blogger.com/profile/05081515949354071062noreply@blogger.com2tag:blogger.com,1999:blog-6303332860239107602.post-50411475208769622392015-12-28T14:23:00.003-05:002015-12-28T14:27:22.510-05:00The Adventures of Puddin'head Jones: My Sixth CentsCheck out my short fiction story, The Adventures of Puddin'head Jones: My Sixth Cents

Hey everyone! I apologize for not keeping up with the blog. Hope everyone is enjoying their summer or whatever season it is where you are.
Things have been a wee bit on the crazy side here. My son has been having a few health issues... but thank God he's doing better now. Thought I'd check in and see how you guys are and post a few pictures of what I've been up to since my last entry Paula Louisehttp://www.blogger.com/profile/05081515949354071062noreply@blogger.com0tag:blogger.com,1999:blog-6303332860239107602.post-56438692685543405772014-04-18T16:34:00.000-04:002014-04-19T16:40:55.691-04:00Ideas for a lovely Easter brunch

Happy, happy, joy, joy!
My old Hamilton Beach Countertop Oven was in pretty bad shape. I used to have to use a flashlight to see inside and at times do the forbidden... open the oven to take a peek. Actually, the oven itself still worked (after 5 plus years). It was the cord that was about to go. The plug area was corroded and I was beginning to feel like it was a hazard. So, outPaula Louisehttp://www.blogger.com/profile/05081515949354071062noreply@blogger.com1tag:blogger.com,1999:blog-6303332860239107602.post-78175703015644191062014-03-06T14:47:00.002-05:002014-03-06T15:13:25.545-05:00Lambsagna?
Lambsagna?
Yes, lambsagna. LOL. It's a word my husband made up when I served him lasagna prepared with ground lamb instead of ground beef. Honestly, it was a truly flavorful dish very similar to the lasagna roll-ups only in casserole form. What you'll need is:
Ingredients:
1 16 oz. package of lasagna noodles (cooked, drained and cooled)
2 lbs. sauteed ground lamb
1 lb. ricottaPaula Louisehttp://www.blogger.com/profile/05081515949354071062noreply@blogger.com0tag:blogger.com,1999:blog-6303332860239107602.post-451639704236400852014-02-14T13:58:00.000-05:002014-02-14T20:56:17.833-05:00Valentine's Day Brownies
Happy Valentine's Day everyone!
Today for Valentine's Day, my son thought he'd bring his grandmother a special treat along with a homemade card. To say the least, she enjoyed it very much. These brownies are super easy and taste so much better then the typical boxed brownie mix. Bake up a batch today for your family or special someone. :)

Hope you all had an awesome holiday season! We had a fantastic Christmas and New Years!
I dedicate this to Steven Long Mitchell whose encouraging tweet made this entry possible. I was losing motivation to keep up the blog until his tweet. One never knows how much a little encouragement can do for someone.

The other day we were seriously craving pizza. Since payday was still a few days away, I found myself making up a batch from the very versatile Bread Dough and Focaccia recipe. It is very simple to make and you'll wind up saving yourself a bunch of dough (pun intended) that you would normally spend on take-out.

There's nothing better on a fall afternoon than a slice of homemade bread slathered in butter. I remember in my childhood, my mother would get up real early on the weekends, and let me help her gather the ingredients together to bake up some crusty luscious bread. As we waited for it to bake, the fragrant aroma of sumptuous loaves would waft up through the air and assault our senses with Paula Louisehttp://www.blogger.com/profile/05081515949354071062noreply@blogger.com0tag:blogger.com,1999:blog-6303332860239107602.post-19321576916737095502013-10-21T18:25:00.000-04:002013-11-23T09:25:08.588-05:00Stuffed Shells and Lasagna Roll-Ups
I mentioned in a previous blog about not having a kitchen sink. Well, the truth is, not only do I not have a kitchen sink, I can't even run two appliances at the same time. As you can imagine, this makes preparing complex, multi-step recipes a little tricky. Preheating my countertop oven and prepping ingredients at the same time isn't even an option. However, over the years I've learned Paula Louisehttp://www.blogger.com/profile/05081515949354071062noreply@blogger.com0tag:blogger.com,1999:blog-6303332860239107602.post-3282652202354769402013-10-04T16:12:00.000-04:002013-10-21T17:50:12.027-04:00Swiss Apple Pie
A few weeks ago while at a physical therapy appointment for an annoying bout of tennis elbow, my wonderful therapist friend Alex handed me the below recipe for Swiss Apple Pie. My first response was, "Swiss Apple Pie! What do they do -- add Swiss cheese to it?" I've often heard of apple pie with cheddar cheese, which I've unfortunately never tried (I LOVE cheese but that's beside the point!). The other day I was thinking to myself, self... do you know what you could really go for? Some good ol’ fashioned pasta and meatballs. It was then that I decided to announce it to the rest of the family and they all eagerly agreed. Move over outdoor grill... pasta and meatballs it is! It was scrumptious! Perfect rustic dish to celebrate the end of summer and the coming new season. It's no accident you stumbled upon this blog. Truly, this blog is an accident... in the making, that is... er... well... sort of. I somehow cooked up the idea with the help of a short odd dream I had of Julia Child. In the dream, Julia was encouraging me to begin a cooking blog. Once I awakened, I completely forgot about the dream.
Later that day as I puttered around my make-shift kitchen—Paula Louisehttp://www.blogger.com/profile/05081515949354071062noreply@blogger.com1
